Sugaring Season along Cloudland Road has arrived. The reason that you see so many sap buckets hanging from maple trees along the road is two-fold. The first is ease of access and second, these trees receive a greater amount of sunshine during the year with less effort so it has been determined the sap is sweeter. Individual farms may not have sugarbush stands (stands of maple trees that they tap to collect maple sap. They may only have enough to collect the sap daily and boil it down on the stove in the kitchen. This is a long process and it takes about 40 buckets full of maple sap to make one gallon of syrup. Remember when the sap comes out of the tree it is the consistancy of water. You can drink it and it is sweet and pure as any water you will ever drink.
